I love summer. I love the kids being out of school and around on the ranch every day. With everyone home, I do lots of cooking. I usually pack lunches for the guys to take to the hay fields. Dinnertime is pretty unpredictable so snacks are essential. These Pineapple Pico de Gallo Avocado Toasts are perfect to tiding everyone over until dinner.
I have been on a huge pineapple kick lately and this pineapple pico de gallo really added a fresh kick to nachos and these avocado toasts. It would also be great over grilled chicken or on fish tacos.
I guess toast is the “thing” these days and maybe for once I’m on trend, but seriously this is my new favorite thing to eat. It would be great for breakfast, a light lunch or even an appetizer for parties.
Pineapple Pico de Gallo Avocado Toasts
Ingredients
For Pineapple pico de gallo
- 1 cup diced tomatoes
- 1 cup diced fresh pineapple
- 2 orange mini sweet peppers
- 2 tablespoons poblano pepper
- 2 green onions
- 1/3 cup cilantro
- 1/2 teaspoon salt
For Avocado toasts
- 1 baguette sliced into 3/4 inch slices
- 1/4 cup softened butter
- 2 ripe avocados
- 1 teaspoon lemon or orange juice
- 1/2 teaspoon salt
Instructions
- Mix all pico de gallo ingredients together into a bowl and stir to combine. Cover and refrigerate until ready to serve.
- Butter one side of baguette slices and place under a broiler or toaster oven until golden brown.
- Meanwhile, mash avocados with lemon juice and salt.
- Spread mashed avocado onto each baguette slice and top with pico de gallo. Serve immediately.

At first glance, I thought your bowl of pineapple pico was a salad, and I was like “I’d eat that!” Even after I realized it wasn’t, I would still totally eat it 🙂 This is the kind of simple thing I like eating for lunches throughout the year. So fresh and flavorful, but still light!
