How to Make Slow Cooker Cheesy Smoked Sausage and Potato Soup:

  • Place potatoes, onions, peppers and smoked sausage in slow cooker.
  • Mix broth, heavy cream, and cornstarch together and pour over potato mixture.
  • Add seasonings and stir until well combined.
  • Cover and cook on high for 3-4 hours.
  • Stir in shredded cheese until melted.

The house smelled so good while it was cooking!  When the soup was just about ready, I popped a pan of cornbread in the oven and I can’t think of anything better to nibble on during game time!

After a hectic week, this was really the perfect Sunday meal.  Generally when I make soup, I take the  time to sauté the vegetables but in the slow cooker the flavors have time to come together without taking that extra step.

We are huge fans of soup for dinner. I think I was just too picky as a kid to enjoy it. These days Italian Gnocchi Soup and Creamy Ham and Potato Soup and Tuscan Sausage Potato Soup and of course our favorite Easy Chicken Noodle Soup are on constant rotation. 

When we have smoked sausage on hand, Red Beans and Rice is always a favorite comfort food meal.

Potatoes are on the menu just about every night of the week and we love these Bacon Cheese Burger Twice Baked Idaho Potatoes to change up the dinner rotation.

Ingredients

  • 2 pounds Idaho® Potatoes peeled and cut into bite-size chunks
  • 1 1/2 - 2 pounds smoked sausage cut into bite-sized chunks
  • 1 large onion diced
  • 1 cup diced sweet peppers
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 tablespoons cornstarch
  • 2 teaspoons Mrs. Dash or other all purpose seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese

Instructions

  • Place potatoes, onions, peppers and smoked sausage in slow cooker.
  • Mix broth, heavy cream, and cornstarch together and pour over potato mixture.
  • Add seasonings and stir until well combined.
  • Cover and cook on high for 3-4 hours or low for 5-6 hours, or until potatoes are cooked through and fork tender.
  • Stir in shredded cheese until melted. Serve immediately.

  1. I don’t care if it’s still 90* degrees here I’m making it this week, I love any slow cooker recipes. Thanks for sharing! YUM!

  2. Great soup. I added carrots, a green pepper and used red potatoes. Instead of Mrs dash I used trader Joe’s 21 season salute. Added extra garlic powder and 21 seasoning salute (about 1/2 Tablespoon more of each but no additional salt). I used 4 cups of chicken broth and 1 cup of half and half. I used Tillamook sliced extra sharp white cheddar from costco and chopped it. The carrots and potatoes did not soften after 4 hours on high so probably another hour or 2 would be perfect. Definitely making it again!

  3. Can I use 2% milk instead of heavy cream? Looks great! Can’t wait to try it. Got my crockpot out and ready.

  4. We followed this recipe exactly but used kosher salt and just one tsp Cavender’s Greek seasoning. It’s a keeper! So good!

  5. I have made this several times. I’ve shared the recipe with many of my friends. It’s a great fall/winter recipe. I make cornbread and eat it with it. So so good!!
