Summer barbecues are so much fun. It’s the perfect time to relax and enjoy time with your family and friends. Today I’m sharing a super easy appetizer to get your party started along with some tips to make your summer parties less stressful.
Doritos are an everyday staple at our house and Doritos Chicken Casserole is one of our very favorite meals on the planet. I took those flavors and made an unbelievable appetizer that everyone will love!
How to Make Doritos Chicken Jalapeno Poppers:
Just a few simple ingredients are all you need: Doritos, cooked and diced chicken (or grab a rotisserie chicken from the market), cream cheese, shredded cheese, salsa and fresh jalapeños. That’s it!
Just mix the chicken, cream cheese, shredded cheese and salsa together and stuff the jalapeños that have been seeded and cut in half. You can even do this ahead of time and refrigerated until you are ready to bake them.
Top with crushed Doritos and pop them in the oven. See that was EASY!
Now this is how you get a party started! These Doritos Chicken Jalapeño Poppers are knock your socks off delicious. They were the first thing to disappear!
I am a bit of a sissy when it comes to spicy foods but these Doritos Chicken Jalapeño Poppers were right up my alley. So much flavor but not too spicy. My entire family LOVED them.

Make a plan. Now I’m not the best at this, but I will say it does make things simple.

Have your guests bring their favorite side dish, ice, drinks, paper plates and napkins. It’s a good idea to delegate and everyone is always glad to pitch in.
Keep decorations simple. Sunflowers are perfect for summer, so bright and cheerful.
I don’t get too carried away with cleaning before a party. I make sure the powder room is tidy, put away any clutter, sweep the floor and I call that good. If you are relaxed, your guests will be too.

Doritos Chicken Jalapeno Poppers
Ingredients
- 1 cup cooked and diced chicken
- 8 oz cream cheese softened
- 8 oz shredded cheese I used Colby-Jack
- 1/2 cup salsa
- 14-16 fresh Jalapeños
- 1/2 cup crushed Doritos
Instructions
- Preheat oven to 400 degrees.
- In a medium- sized bowl, add chicken, cream cheese, shredded cheese and salsa. Mix until well combined.
- Slice jalapeños in half and remove seeds. Fill with chicken filling and place on a lined baking sheet.
- Sprinkle with crushed Doritos.
- Bake for 20-25 minutes or until filling is heated through and cheese is melted.
- Serve immediately or at room temperature.
These look so delicious. I haven’t made these yet but plan to. I’m just commenting to let you know your instructions say to add shredded chicken instead of shredded cheese.
