Lemon desserts are completely irresistible in my book. They are a surefire way to brighten any day and these Lemony Lemon Bars are a must-try for dessert lovers.

I want dessert every day and these Lemony Lemon Bars were certainly a favorite. I’m telling you they were gone in just a few hours and I immediately wanted to make them again.
These lemon bars are more chewy and brownie like than my traditional lemon bars with cream cheese icing. I have been wanting to try a lemon bar like this and it’s definitely going on the dessert rotation. They were just so simple to make and I love lemon desserts any time of year.
Lemony Lemon Bars
Ingredients
- For the Crust:
- non-stick cooking spray
- 1 cup 2 sticks unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all- purpose flour
- 1/4 teaspoon salt
- For the Filling:
- 1 3/4 cups granulated sugar
- grated zest and juice of 3 lemons
- 3/4 cup all- purpose flour
- 4 large eggs room temperature
Instructions
For the Crust:
- Preheat the oven to 350 degrees. Line an 11 x 7 inch baking pan with aluminum foil and spray with cooking spray.
- In a large mixing bowl, using an electric mixer on medium speed or a wooden spoon, beat together the butter and sugar until light and creamy. This will take about 3 minutes if using an electric mixer or 5- 6 minutes if creaming by hand. Add the flour and salt and beat on low speed or by hand until the dough comes together, about 1 minute.
- Press the crust dough evenly into the prepared pan, covering the bottom of the pan completely.
- Bake for 20 minutes.
For the Filling:
- In a large bowl, whisk together the sugar, lemon zest and flour until combined. Whisk in the lemon juice and eggs until thoroughly incorporated.
- When The crust comes out of the oven, our the filling over the top.
- Bake for 35 minutes, until the top has set.
- Let cool to room temperature and then refrigerate for 2-3 hours to set. To serve, cute into 12 bars. Serve chilled.
- *Dust the top of the bars with confectioners sugar for an extra-pretty bar.
