Smoked Spare Ribs

Smoked Spare Ribs are essential for summer cookout menus, tailgating and get togethers with friends! Packed with a delicious brown sugar rub and slow smoked for the most tender, juicy and delicious ribs ever!

Ribs are a family favorite, we often enjoy Dr Pepper Barbecue RibsCoca-Cola Barbecue Ribs or Peach and Ginger Braised Short Ribs for weekend get togethers. Our new favorite has to be these smoked spare ribs and they are perfect for summer cookouts.

Racks of Smoked Spare Ribs

Smoked Spare Ribs

We have started Friday night cookouts for our family and we are just having the best time. Last week I picked up these two huge racks of spare ribs and knew they would be perfect.

Fridays are usually a little more laid back but we ended up running to Home Depot and buying a bunch of herbs and flowers for the outdoor kitchen.

My guys built the coolest planter and I’m totally loving it!  We planted a few herbs and all kinds of flowers. This is my happy place!

I popped some baked potatoes in the oven and then we got busy getting the ribs ready for the smoker.

How to Smoke Spare Ribs:

We made a simple spice mix of kosher salt, fresh ground pepper and granulated garlic. We use this basic blend for most of the meats we do on the grill. It’s simple and delicious. We sprinkled about 1 tablespoon over each side of the ribs and rubbed it evenly.

We prepared a wood fire on the open grill to sear the ribs before placing them in the smoker.

You can skip this step, but we like to start ours this way.

This just gives the ribs a little jump start on the indirect cooking.

Next we built a wood fire, again using our hickory grilling wood in the smoker section of our grill. This indirect heat allows the ribs to cook slow and give that fantastic smoky flavor.

Next we mixed brown sugar and the remainder of our spice blend together and rubbed this over the meaty sides of the ribs.

Next we placed them on the grill and closed the lid.

We kept the temperature at about 250 degrees and smoked the spare ribs for about 2 hours. It’s so hard not to keep peeking when it smells so good! We checked them with a meat thermometer just to make sure they were cooked through.

We are big time barbecue sauce fans. I mean obviously, I did own a barbecue sauce business and my Dr Pepper Barbecue Sauce is one of my most popular recipes. You might also like Jalapeno Barbecue Sauce and Homemade Barbecue Sauce. These Cowboy Beans are one of my favorite sides for grilling.

However, these ribs were so flavorful that they really didn’t even need sauce. They were tender and perfectly juicy. We let them rest for about 5 minutes and sliced them up. So, so good!

Smoked Spare Ribs

Ingredients

  • 2 racks pork spare ribs
  • 1/4 cup kosher salt
  • 1/4 cup pepper
  • 2 tablespoons granulated garlic
  • 1 cup brown sugar

Instructions

  • Place spare ribs on a large platter.
  • Combine salt, pepper and granulated garlic.
  • Season each side of rib racks with about 1 tablespoon of seasonings.
  • Mix remaining seasonings with brown sugar and set aside.
  • Make a bed of coals and sear ribs racks on both sides, until meat just starts to brown.
  • Add hickory grilling wood to smoker and add ribs to grates, away from the fire and close the lid.
  • Monitor your smoker to keep the heat around 250 degrees.
  • Smoke ribs for 2 hours or until internal temperature reaches 185-190 degrees.
  • Remove from grill and allow to rest 5-10 minutes before slicing and serving.
