Mini S’mores Cheesecakes
Easy and delicious Mini S’mores Cheesecakes are going to be the hit of any party or celebration. Creamy vanilla cheesecakes are topped with milk chocolate, toasted marshmallows and graham cracker crumbs for an irresistible treat!

Mini S’mores Cheesecakes
S’mores are a must- have for summer and these mini cheesecakes are a fun spin on everyone’s favorite campfire treat.
I am a huge candy bar fanatic. When I buy the stuff for S’mores, I have to buy extra Hershey Bars.
They seem to disappear before we ever make it to the fire for s’mores. I am pretty sure that I’m not the only one sneaking the candy bars but nobody is admitting anything.
How to Make Mini S’mores Cheesecakes:
- Mix graham cracker crumbs and butter together and press into a mini cheesecake pan.
- Using an electric mixer, beat softened cream cheese, whipping cream, sugar, eggs and vanilla together until creamy.
- Pour batter into mini cheesecake pan and bake for 25 minutes.
- Set cheesecake pan on a wire rack and allow to cool.
- Refrigerated cheesecakes 2 hours.
- Melt a chocolate bar and add a dollop to each cheesecake.
- Toast several mini marshmallows or 1/2 a large marshmallow for each cheesecake.
- Sprinkle with graham cracker crumbs.
- Top each with a piece of a chocolate bar.

HELPFUL TOOLS FOR BAKING MINI CHEESECAKES:
I highly recommend the Mini Cheesecake Pan – I have had mine for a few years and use it often. It’s very affordable and super easy to clean.
You can make the mini cheesecakes a day in advance and keep them refrigerated. They are best topped the day you want to serve them.
If you are hosting a party or get together, it would be fun to put out the toppings and let everyone toast their own marshmallows and top their own s’mores cheesecakes.
These mini cheesecakes are seriously simple and make such an impressive dessert. You can top them any way you like, the possibilities are endless but I’m really loving the chocolate and marshmallow combo for summer.
I love that these cheesecakes come together in less than an hour. They are great to make ahead of time for any celebration or just for a fun weeknight dessert.
Mini desserts are great because you can have a bite or two instead of a whole giant slice and still fit into your swimsuit this summer. Maybe.
I need all of the help I can get when it comes to moderation, especially when it comes to cheesecake or any dessert for that matter.
I had so much fun making these Mini S’mores Cheesecakes for one of our family cookouts. The kids loved roasting the marshmallows, even the big kids who aren’t really kids any more.
The mini marshmallows were a bit harder to toast over our grill fire, but I forgot to pick up any of the big marshmallows.
The mini marshmallows worked out fine and these cheesecakes were a big hit with the whole family. I mean who could resist s’mores in cheesecake form?

Mini S’Mores Cheesecakes
Ingredients
- 1/2 cup + 2 tablespoons graham cracker crumbs divided use
- 3 tablespoons melted butter
- 8 oz softened cream cheese
- 2 tablespoons heavy whipping cream
- 1/4 cup sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 Hershey's Milk Chocolate Bars
- 1/2 cup mini marshmallows or 6 large marshmallows cut in half
Instructions
- Preheat oven to 325 degrees
- Mix 1/2 cup graham cracker crumbs and melted together and press about a tablespoon of mixture into each space of the cheesecake pan. Set aside.
- Using an electric mixer, beat cream cheese on medium speed until smooth, add whipping cream and beat one minute. Slowly add sugar and beat until incorporated. Add egg and vanilla and continue to beat until combined. Scrape sides and bottom of the bowl and beat one more minute.
- Scoop filling over crust.
- Bake 25 minutes or until cheesecakes are set.
- Place on a wire rack to cool. Chill 2 hours.
- Remove cheesecakes from pan by running a sharp knife around the edges.
- Break one milk chocolate bar into a bowl and melt in the microwave, about 30 seconds. Stir until smooth.
- Dollop chocolate over each cheesecake.
- Toast marshmallows and place over melted chocolate.
- Garnish with additional Hershey Bar piece and additional graham cracker crumbs.
- Serve immediately or cover and refrigerate until ready to serve.
