How to Make Mustard BBQ Chicken
- Brine chicken in salt water brine for at 2 hours. Remove and pat dry with paper towels.
- Brush with Mustard BBQ Sauce and prepare your grill with a medium fire, about 300-350 degrees.
- Turn chicken after about 10 minutes and continue to cook until internal temperature reaches 165° in the thickest part, about 25-30 minutes.
- Allow chicken to rest 5 minutes before slicing and serving. Serve with additional sauce if desired.
We used boneless skinless whole chicken breasts for this recipe, if using bone-in chicken, adjust cooking time for an additional 10-15 minutes. Internal temperature should be 165° in the thickest part, near the bone.

Mustard BBQ Chicken
Ingredients
- 2 pounds boneless whole chicken breasts
For Brine
- 2 quarts warm water
- 1/2 cup kosher salt
- 2 teaspoons peppercorns
- 2 sprigs fresh rosemary
- peel of 1/2 lemon
For Grilling
- 1/2 cup Mustard BBQ Sauce
Instructions
- Mix warm water, salt, peppercorns, garlic, rosemary and lemon peel in a large bowl or deep pan. Add chicken, cover and refrigerate for 2 hours.
- Remove chicken from brine and pat dry with paper towels.
- Brush with Mustard BBQ Sauce on all sides.
- Heat grill with a medium fire about 300- 350°.
- Grill chicken for about 10 minutes and flip them over.
- Continue grilling about 30 minutes or until internal temperature reaches 165° in the thickest part. If using bone-in chicken, cooking time will increase about 10-15 minutes. Check internal temperature near the bone.
- Allow chicken to rest 5 minutes before slicing.
- Serve with additional Mustard BBQ Sauce if desired.

The brine keeps the chicken juicy and flavorful. Even a 30 minute brine makes a big difference. I was surprised the first time I tried it and always try to use the brine if I have time.
