Air Fryer Roasted Potatoes with garlic and herbs is a quick and easy side dish for any meal. Potatoes get crispy on the outside and fluffy on the inside and are full of delicious flavors from the roasted garlic and rosemary.

Our garden has really taken off in the last week. We have been digging a few potatoes for dinner and I couldn’t wait to try them in the air fryer.

Roasted potatoes are one of my favorite side dishes because they are so easy. During the summer I just hate turning on the oven. So the air fryer is just the ticket for an easy side dish.
How to Make Air Fryer Roasted Potatoes:
- Cut larger potatoes into about 1 1/2-2 inch chunks, you can leave smaller baby potatoes whole.
- Place in a large bowl and drizzle with olive oil. Add rosemary, garlic, salt and pepper and toss to coat well.
- Add potatoes to air fryer basket and spread evenly.
- Cook at 350° for 22-25 minutes, stir after about 10 minutes.
Oven Method for Roasted Potatoes:
If you don’t have an air fryer, follow the same preparation and layer on a baking sheet. Bake at 400° for 35-40 minutes or until potatoes are cooked through.
Variations for Air Fryer Roasted Potatoes:
I used baby red potatoes from our garden. Russets or Yukon gold potatoes would also be delicious. You can scrub them and cook with the skins on or peel them if you prefer.
Use what ever herbs you have on hand. Fresh or dried, either is fine.

Should I Buy an Air Fryer?
I have to admit, I was pretty skeptical of air fryers. You know I’m big on deep fried foods like Southern Fried Shrimp, Fried Pickles, Fried Squash, Chicken Fried Steak Bites. My list of favorite fried foods is pretty long and I’ll be adapting these recipe for the air fryer soon!
I told my parents that they didn’t need an air fryer, that their convection oven would do the same thing. That is until I got an air fryer.
I do love that you can get crispy food in an air fryer without all of the oil from deep frying. Air fryer French fries are awesome. I used my air fryer every day solid for a week and that is saying something. I am usually slow to coming around to a new gadget in the kitchen.
If you have a large family, I do recommend getting a bigger air fryer. I was concerned that even the big one would not work for our family but it totally does.
Food cooks fast in the air fryer and even if I cook 2 batches, it’s still faster than deep frying or using the oven. It’s easy enough or my teenager to use.
Is an Air Fryer Hard to Clean?
The cleanup is a snap. So much less of a mess than deep frying. Nothing sticks to the basket. I just hand wash after each use.

Air Fryer Roasted Potatoes
Ingredients
- 2 pounds potatoes red, russet or Yukon gold
- 1/4 cup olive oil
- 2 large garlic cloves minced
- 2 teaspoons minced fresh rosemary
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
Instructions
- Scrub potatoes and peel if desired. Cut larger potatoes into about 1 1/2-2 inch chunks, you can leave smaller baby potatoes whole.
- Add potatoes to a large bowl and drizzle with olive oil.
- Add rosemary, garlic, salt and pepper and toss with hands until potatoes are throughly coated.
- Spread potatoes in air fryer basket in an even layer.
- Cook at 350° for 22-25 minutes, or until potatoes are tender. Stir about half way through.
