Fish Sticks are always a family favorite but they can be expensive to feed a large family. Try this budget friendly meal that is almost just as easy as the prepared version from the freezer section of your grocery store.
I grew up in my family’s catfish restaurant where all of the food was deep fried and I am still a huge fan of deep fried fish and hush puppies. We often have a fish fry on the weekend with the whole family. For busy weeknights though, I love this oven baked fish.

How to Make Fish Sticks:
Cut fish filets into 1 1/2 – 2 inch strips.
Place all purpose flour into a shallow dish. Add egg and milk into a small shallow dish and mix well. Panko breadcrumbs and seasonings are mixed together in a pie plate or other shallow dish.
Dredge fish through all purpose flour, shaking off any excess.
Dip in egg mixture, coating both sides.
Then place into seasoned Panko, pressing lightly for breadcrumbs to adhere to fish.
Place on a lined or greased baking sheet in a single layer, not touching.
Bake fish sticks for 15-17 minutes or until golden brown and fish has reached 145° internal temperature.
Serve with tartar sauce and fresh lemon slices.
Tips for Breading Fish:
Dredging the fish in flour before the egg and milk mixture will give the egg something to stick to. Then coat with the Panko breadcrumbs, which are great for getting a crunchy crust. Crushed crackers like Ritz or potato chips will also make a great breading.
How to Tell if Fish is Done:
Fish will become flaky when it is cooked through. Use a meat thermometer to check that the fish has reached 145° internal temperature.

Fish Sticks
Ingredients
- 1 pound firm white fish filets
- 1 large egg
- 1 tablespoon milk
- 1 cup all purpose flour
- 1 1/2 cups Panko breadcrumbs
- 2 tablespoons Mediterranean or Italian seasonings
- tartar sauce and fresh lemon slices for serving
Instructions
- Preheat oven to 375°
- Cut fish into 1 1/2 - 2 inch strips
- Add all purpose flour to a shallow dish.
- Mix egg and milk together in a small shallow dish.
- Add Panko and seasonings to a shallow pie plate and mix well.
- Dredge fish in flour, coating all sides. Dip into egg mixture, coating completely. Place in breadcrumbs and press to coat all sides.
- Place breaded fish on a greased or lined baking sheet about 1/2 inch apart in a single layer.
- Bake for 15-17 minutes or until fish is flaky and has reached 145° internally.
- Serve fish sticks with tartar sauce and fresh lemon slices.
