Pork Rib Roast

This is an elegant meal but it’s prepared really easily on your grill or baked in your oven. The maple glaze gives it a rich flavor that caramelizes and into a delicious crust for the tender and juicy roast.

Pork Rib Roasts are not often found in the supermarket isles, but you can usually call ahead and order or just ask your butcher for one. The ends should be Frenched, which is cutting the meat away from the end of each rib, exposing the bone. The butcher can do this for you also.

We purchased a whole pork rib roast and cut it into two portions. We were considering making a crown roast and decided to go with the double pork rib roast with the ribs crossed for a more simple presentation. 

This recipe will work with a single or double roast. 

How to Make Pork Rib Roast:

Drizzling maple glaze

Prepare the maple glaze: Add pure maple syrup, granulated garlic, black pepper, smoked paprika, kosher salt and chopped rosemary to a saucepan. Bring mixture to a boil and cook 3-5 minutes. Remove from heat and cool slightly.

Set pork on the counter at room temperature for 1 hour before grilling. If you are cooking a double roast, you can tie the ribs together with twine or use two long skewers to hold the roasts together. 

Cut slits in the pork over the meaty part of the roast. Brush with maple glaze over all sides. 

Prepare grill or oven to 300°.

For the grill: Place over indirect heat and close the lid. Cook for 1 hour and brush with remaining maple glaze. Continue cooking about 1 1/2 hours or until internal temperature reaches 145° for medium and 155° for well done.

We used pecan to add a delicious smoke flavor to our roast. Hickory or oak are also great options. 

For the oven: Cook on a baking sheet, uncovered for 1 hour, then brush with maple glaze. Continue to cook 1 1/2 hours or until internal temperature reaches 145° for medium – 155° for well done.

Remove roast from fire and allow to rest 10 minutes. Remove skewers if using and slice.

Options for slicing: Cut along the rib bone for boneless loin slices or cut between the ribs for chop slices. 

How Long to Cook a Pork Rib Roast?

Our 2 roasts were about 4 1/2 pounds each and cooked in about 2 1/2 hours. Use a digital meat thermometer to ensure your roast is cooked to the perfect temperature between 145 – 155°.

How to Store Left Over Pork:

Store leftover pork in an airtight container or wrapped tightly in 3 layers of plastic wrap for up to 3 days. 

To freeze: wrap in 3 layers of plastic wrap and then a layer of foil. Freeze up to 2 months.

Ingredients

  • 2 4-5 pound pork rib roasts
  • 12 oz pure maple syrup
  • 2 tablespoons granulated garlic
  • 1 tablespoon coarse ground black pepper
  • 1 tablespoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon minced fresh rosemary

Instructions

  • Remove pork roasts from refrigerator about an hour before cooking.
  • Place ribs on a baking sheet with ribs facing each other. Pull roasts together, crossing the ribs.
  • Tie the ribs together of the two roasts together or use two long skewers stuck through the middle of the roasts to hold them together. 
  • Prepare glaze by adding maple syrup, to a small pan with garlic, pepper, smoked paprika, kosher salt and rosemary.
  • Whisk together and cook over medium- high heat. Bring mixture to a boil for 3-5 minutes, whisking often.
  • Remove from heat and allow to cool slightly.
  • Cut 1/2 inch slits in tops of roast through the meaty part.
  • Brush glaze over all sides of roast.
  • Prepare grill or oven to 300°. 
  • For the grill: Place over indirect heat and close the lid. Cook for 1 hour and brush with remaining maple glaze. Continue cooking about 1 1/2 hours or until internal temperature reaches 145° for medium and 155° for well done.
