How to Make Peanut Butter Oatmeal Cookies:
- Add softened butter, peanut butter and brown sugar to a mixing bowl and stir together.
- Mix in egg and vanilla.
- Add flour, oats and baking soda. Stir until well combined.
- Scoop into 1 1/2 inch balls and roll in sugar.
- Place on a parchment paper lined baking sheet about 2 inches apart.
- Mash with a fork crosswise.
- Bake for 10-12 minutes or until edges are lightly browned.
- Remove to a cooling rack to cool completely.
- Store cooled cookies in an airtight container up to 5 days.
This is a small batch and can be doubled if desired.

Ingredients
- 1/2 cup softened butter
- 1 cup peanut butter
- 1 cup brown sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 1 1/4 cup all purpose flour
- 1 cup old fashioned oats
- 1 teaspoon baking soda
- 1/3 cup sugar for rolling
Instructions
- Preheat oven to 375°F.
- Add butter, peanut butter and brown sugar to bowl and stir to combine.
- Next, add eggs and vanilla, mixing until combined.
- Add flour, oats and baking soda, mix well.
- Pour 1/4 cup sugar to a small bowl.
- Use a cookie scoop to form 1 1/4 inch dough balls.
- Roll in sugar and place 2 inches apart on a greased or lined baking sheet.
- Mash cookies with a fork crosswise.
- Bake for 10-12 minutes or just until edges are lightly browned.
- Cool cookies on a wire rack.
- Store cooled cookies in an airtight container up to 5 days.
