Watermelon Mojitos
Watermelon Mojitos are a refreshing and delicious cocktail for summer time. It’s so simple to make these watermelon and rum cocktails for weekend get togethers or just for sipping by the pool!
Is there anything more refreshing than ice cold watermelon when the summer temperatures are scorching hot? We’ve been feasting on watermelon every week and I couldn’t resist sneaking a bit of it into a cool and refreshing mojito.

Easy Cocktail Recipes are my favorite. Mojitos certainly fit the bill. The combination of mint and lime is hard to top. I know you are going to love these easy watermelon drinks.
Ingredients for Mojitos:
Mojitos are a rum based cocktail with lime and mint. Add in your favorite fruits like watermelon, blueberries or strawberries for different variations. I like sweet cocktails so I add in simple syrup to sweeten them up.
How to Make Watermelon Mojitos:
- Place watermelon cubes into a glass with mint leaves and lime juice.
- Use a muddler or end of a wooden spoon to smash the watermelon.
- Pour in rum, and simple syrup. Add ice and fill the glasses with Sprite.
- Garnish with mint, a slice of lime and a chunk of watermelon if desired.
Recipe Tips:
Really ripe watermelon works best for mojitos. When you have cut your watermelon up and it’s been in the fridge for a couple of days, it doesn’t stay as crisp and no one wants to eat it. That’s the perfect watermelon for cocktails! I think the sweet flavor intensifies and gives your cocktail real watermelon flavor.
What is the Best Rum for Mojitos?
I use light rum for mojitos. Use your favorite brand, we used Bacardi for these mojitos.
What is Simple Syrup?
Simple syrup is just equal parts sugar and water. Heat water, it doesn’t have to be boiling and mix in sugar until dissolved. Store in a mason jar in the refrigerator up to 2 weeks. It’s great for sweetening everything from lemonade and iced tea to your favorite cocktails.

Watermelon Mojitos
Ingredients
- 4 cups watermelon chunks
- 4 ounces Rum
- 2 limes one for garnishing
- 10 fresh mint leaves plus more for garnish
- 2 ounces simple syrup
- 8 ounces Sprite
- ice
Instructions
- Place 3 - 4 chunks of watermelon, 5 mint leaves and squeeze 1/2 lime into each glass.
- Muddle with a cocktail spoon or wooden spoon.
- Add rum, simple syrup and ice. Top with Sprite.
- Garnish with a slice of lime and fresh mint.
I have to give it four stars because of changes. I only found this recipe after coming home with watermelon rum.
So, I did not add watermelon, just a wee bit of Stevia, and ginger ale since that’s what I had.
Was terrifically pleased to find something to do with my leftover mint from our Mint Juleps and horse racing. I am 71, my husband is 75 and this was the first time either one had a MJ.
