What does the cream of tartar do in cookies?

Cream of tartar is an acid that comes in a dry powder form, found in the baking isle of the grocery store. It is what gives snickerdoodles a tangy flavor and chewy texture. The acid keeps the sugar from becoming crunchy in the cookies, producing a softer cookie.
