Cornflake Chicken Tenders ~ Quick and Easy Dinner
Even though we work from home, things get hectic and I forget to make a dinner plan. I depend on things I can thaw quickly from the freezer like chicken tenders and this air fryer cornflake chicken is just the ticket.
It’s one of those dinners that we can all agree on served with French Fries, Air Fryer Tater Tots, Homemade mac and cheese and coleslaw. We also love Fried Okra or Mexican Corn for a quick side for chicken.
Ingredients Needed:
Chicken Tenders – any cut of chicken will work, I love chicken tenders to make a quick and easy dinner.
Cornflakes – the perfect crust for crunchy chicken.
All Purpose Flour – dredging the chicken in flour helps build a fantastic crunchy coating.
Granulated Garlic, kosher salt, black pepper – simple seasonings are all you need for these chicken tenders. Add chili flakes if you like a spicy kick.
Eggs – beaten eggs are the key to getting the cornflake crust to adhere to the chicken while it cooks.
Olive Oil – just a bit of oil will help the crust to brown and give it that crispy coating that everyone craves.
Parsley for garnish – totally optional but it does make everything look fresh and delicious.
How to Make Cornflake Chicken:
Step 1:
Pat chicken dry with paper towels.
Pour cornflake crumbs into a zip top bag and zip the top, squeezing out the air.
Crush the cornflake crumbs by squeezing the bag or pounding lightly with a rolling pin.
For fine crumbs you can run the cornflake crumbs through the food processor.
Mix flour with garlic, salt and pepper in a shallow bowl.
Beat eggs in another shallow bowl.
Step 2:
Dredge chicken tenders in flour.
Dip into egg, coating all sides.
Place chicken into cornflake crumbs and toss to coat, pressing the cornflake crumbs into the chicken.
Lay coated chicken onto a lined baking sheet.
Spray chicken lightly with olive oil.
Step 3:
Air Fryer Directions:
Preheat air fryer at 400° for 5 minutes.
Place chicken tenders in the air fryer with space in between, my air fryer held 3 at a time.
Cook for 8 – 10 minutes until internal temperature reaches 165° using a digital thermometer.
Remove to a wire rack lined baking sheet.
Garnish with parsley if desired.
Serve immediately with your favorite dipping sauce like homemade barbecue sauce, honey mustard or ranch dressing.
Oven Directions:
Cook at 375° for about 15- 17 minutes or until internal temperature reaches 165°.
