Stracciatella Soup
Stracciatella Soup with smoked chicken is a flavorful and delicious soup that is a very comforting, low-carb dish to add to your dinner plans. Ready in under 30 minutes for a quick and easy meal.
Traditional Italian Stracciatella Soup is mainly broth and egg, like an Italian Egg Drop Soup. We are making it a little heartier with the addition of finely diced smoked chicken. We also love to make Chicken Mushroom Soup with leftover grilled chicken.
Stracciatella Soup ~ Hearty Italian Soup Recipe
Stracciatella is derived from the word stracciare, which means “to shred” in Italian and is pronounced stra·chuh·teh·luh. Stracciatella describes the eggs and cheese in the soup, sometimes referred to as Italian Egg Drop Soup. It’s a traditional dish to serve for Easter in many parts of Italy but it’s easy and delicious for any time of year.
Ingredients Needed:
- Homemade Chicken Broth ~ We love making homemade broth after smoking whole chickens. It has the most amazing flavor. This is the key to the soup being so flavorful. Of course, this recipe will work with store bought broth as well but won’t be as flavorful.
- Green Onions ~ Not traditional but they add texture and flavor.
- Eggs ~ Use 1- 2 eggs, your choice. The eggs are beaten and slowly streamed into the hot broth, making ribbons that are a lot like pasta.
- Parmesan Cheese ~ For flavor and texture
- Smoked Chicken ~ Use a rotisserie chicken if you don’t have leftover smoked chicken on hand.

How to Make Stracciatella Soup with Smoked Chicken:
- Dice the chicken.
- Slice green onions.
- Shred the Parmesan cheese.
- Beat the eggs in a bowl.
- Pour broth into a soup pan or dutch oven.
- Add green onions to the broth and place over high heat and bring to a boil.
- Stir the broth in a circular motion.
- Slowly stream in the beaten eggs.
- Lower to simmer and add in parmesan.
- Stir in chicken.
- Cook for 10 minutes, stirring occasionally.
- Serve soup and garnish with parsley if desired.
One of my favorite meal prep ideas for easy weeknight dinners is to make a couple of whole smoked chickens on the weekend. The recipe options are endless and this soup is going to be on the regular dinner rotation with our smoked chicken.
Recipe Variations:
Chopped baby spinach or fresh basil are also great additions to this simple soup. Orzo or other small pasta can also be added.
How to Store and Reheat:
Store soup in an airtight container, like these deli containers, in the refrigerator up to 2 days.
Reheat in a pan over medium heat, stirring often until heated through.

Ingredients
- 8 cups homemade chicken broth
- 1 cup sliced green onions
- 2 eggs beaten
- 1/2 cup finely grated Parmesan cheese
- 2 cups diced smoked chicken
- fresh parsley for optional garnish
