When it comes to desserts, strawberries are always at the top of our favorites list. We love No Bake Strawberry Cheesecakes and Strawberry Slab Pie but there’s nothing easier than making chocolate covered strawberries!
If you are looking for something special for Valentine’s Day, an anniversary dinner or date night in, it doesn’t get much better than these easy chocolate covered strawberries. Pair them with champagne punch for an extraordinary treat.
Ingredients Needed
- Fresh Strawberries ~ Frozen strawberries will not work for this recipe because of the moisture content.
- Chocolate ~ For this recipe we are using semi-sweet chocolate chips. Bittersweet baking chocolate works well too if you have it.
- Heavy Whipping Cream ~ Melts with the chocolate to create a delicious ganache coating.
- Dark Spiced Rum ~ Optional flavor addition, it can be skipped if you are making these for the kids.
- White Chocolate ~ We are using white chocolate chips, any white baking chocolate will work. It’s optional for white chocolate drizzle that just makes the strawberries a little prettier.
Step By Step Directions
STEP 1 Wash the strawberries well. Place in a bowl and cover with ice water for about 5 minutes. This will crisp up the strawberries. Drain really well and dry with a tea towel, paper towel or air dry completely.
TIP: Strawberries must be completely dry or the chocolate will not stick!
STEP 2 Heat heavy whipping cream and rum over low heat but do not bring to a full boil. Remove from heat just as mixture starts to bubble.
STEP 3 Place chocolate chips in a bowl.
STEP 4 Pour cream over chocolate chips and set aside about 3 minutes.
STEP 5 Stir together until chocolate chips are completely melted.
TIP: If chocolate chips do not melt completely, place in the microwave in 10 second intervals, stirring until melted.
STEP 6 Line a rimmed baking sheet with parchment paper.
STEP 7 Grab strawberries by the stem and dip into the melted chocolate. Place on lined baking sheet, repeating with the remaining strawberries.
STEP 8 Melt white chocolate chips in a non stick pan over low heat or in the microwave in 15 second intervals until melted.
STEP 9 Drizzle over strawberries using a fork or place in a piping bag (be careful with this method, the white chocolate could burn you).
STEP 10 Place strawberries in the refrigerator to set up about 20 – 30 minutes.
Notes and Variations
- Garnish Ideas: Toasted coconut, decorative sprinkles, finely chopped toasted nuts, crushed graham crackers or cookies. Sprinkle any of the garnishes on after dipping into chocolate.
- Storage: Store chocolate covered strawberries loosely covered in the refrigerator up to 3 days.
- Serving Suggestions: Chocolate covered strawberries make a delicious no bake dessert but can also be used as a garnish to top Strawberry Cake, Texas Sheet Cake or to dress up Cheesecake.
