Chipotle Ground Beef Taquitos is a quick, easy and delicious dinner that the whole family will love. Crispy fried taquitos with a cheesy ground beef filling that has a spicy chipotle kick.
I am always in search of new ground beef recipes because it is the best for a quick dinner and we always have a freezer full of ground beef. These taquitos were a huge hit and can be on the table in about 30 minutes.

Ingredients for Chipotle Ground Beef Taquitos Recipe
- Ground Beef – We like using 90/10 but 80/20 will work well also. Just drain off the extra grease before seasoning.
- Yellow Onion – diced.
- Granulated Garlic
- Ground Cumin
- Kosher Salt
- Black Pepper
- Chipotle Sauce – I found this next to the chipotle peppers in adobo sauce. It has mild spice, not as spicy as adding the whole chipotle peppers.
- Cheddar Cheese – Shredded
- Flour Tortillas – Small, fajita size.
- Frying Oil – Lard or Vegetable Oil (I have started using lard and loving it).
Toppings for Chipotle Ground Beef Taquitos
- Diced tomatoes
- Pico de Gallo or homemade salsa
- Sour Cream
- Diced avocado or guacamole
- Cilantro
Step-By-Step Directions for Beef Chipotle Taquitos
- Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks to brown on all sides.
- Add diced onion and seasonings to the browned ground beef, stirring to mix well. Continue to cook, stirring often. If your ground beef is super lean, add 1 tablespoon of olive oil if needed.
- Continue to cook until onions are softened, about 6 – 8 minutes.
- Remove from heat and stir in chipotle sauce.
- Mix in the shredded cheese.
- Spoon ground beef filling into tortillas and roll up, placing seam side down onto a baking sheet or cutting board.
- Heat lard or vegetable oil in a cast iron skillet or dutch oven to 375° using a deep fry thermometer.
- Fry taquitos a few at a time, seam side down first.
- Turn after a few minutes to brown all sides.
- Remove to a paper towel lined wire rack in a sheet pan.
- Serve immediately with your favorite toppings.
Recipe Notes
- Storage: Store leftover taquitos in an airtight container or wrapped in plastic wrap in the refrigerator 3-4 days.
- Reheat: Place taquitos on a baking sheet and bake at 375° for 10-12 minutes or until heated through.
- Baking Instructions: If you prefer to bake taquitos instead of deep frying, place on a parchment lined baking sheet. Spray or brush each taquito with olive oil or vegetable oil. Bake at 375° for 12- 15 minutes our until golden brown and crispy.
- Variations: Substitute salsa verde or picante sauce for the chipotle sauce if desired.
