How to Make a Bees Knees Cocktail:
- Fill a cocktail shaker about 3/4 full of ice. Add gin, honey syrup and fresh lemon juice or orange juice.
- Shake vigorously and pour into a martini glass.
- Garnish with a citrus twist.
The Bees Knees is a classic cocktail from the prohibition days of bathtub gin. When mixed with sweetened citrus juice, it was the best or the bees knees as they would say back in the day.
How to Make Honey Syrup:
Mix equal parts honey and hot water and mix until combined. Cool to room temperature before mixing cocktails. Store in an airtight container in refrigerator for up to 4 weeks.
Honey syrup is great for cocktails or to sweeten ice tea or smoothies.

Bees Knees
Ingredients
- Ice
- 1 ounce fresh lemon juice or orange juice
- 1/2 ounce of honey syrup
- 2 ounces gin
- lemon twist for garnish
Instructions
- Add ice to a cocktail shaker.
- Add lemon juice, honey syrup and gin.
- Shake vigorously.
- Strain into a glass.
- Garnish with a lemon twist if desired.
Notes
Combine 1/4 cup honey with 1/4 cup hot water. Stir until combined. Cool to room temperature before making cocktails. Store in airtight container in refrigerator up to 1 month. Double cocktail recipe as desired.
