Tools for Baking the Best Biscotti:
- Biscotti dough is rather stiff and is easily made with a stand mixer. It might be more of a challenge for your hand mixer.
- Half Sheet Pans are my favorites for baking cookies including biscotti.
- Silpat Baking Mats are super handy for baking biscotti or you can use parchment sheets.
- Wire Cooling Racks are a must for cooling your biscotti.
How to Make Biscotti:
- For Basic Biscotti you will mix together softened butter, sugar, eggs and vanilla extract. Next you will add in the dry ingredients: flour, baking powder and salt.
- Stir in mix-ins such as mini chocolate chips, nuts, dried fruits or citrus zest.
- Divide the dough into two and shape each half into a log.
- You may need to dust the logs lightly with flour if your dough is sticky.
- Bake for 25 minutes and allow the cookie logs to cool.
- Slice into half inch slices and return to baking sheets.
- Bake again for an additional 20 minutes.
- Cool on wire racks.
- Store in airtight containers.
