Black Eyed Pea Salad

Quick and easy side salads are my favorite to pair with grilling recipes and easy weeknight dinners. This black eyed pea salad hits the spot; it can also be made ahead and tastes even better the next day.
Ingredients for Black Eyed Pea Salad
- Apple Cider Vinegar
- Olive Oil
- Brown Sugar
- Kosher Salt
- Fresh Ground Pepper
- Ground Cumin
- Smoked Paprika
- Minced Garlic
- Canned Black Eyed Peas
- Red Onions
- Bell Peppers
- Fresh Cilantro
How to Make Black Eyed Pea Salad
- Make the Dressing: Add vinegar, olive oil, brown sugar, salt, pepper, cumin, paprika and minced garlic to a bowl. Whisk to combine.
- Rinse and drain black eyed peas.
- Dice the vegetables.
- Place black eyed peas, vegetables and dressing in a bowl. Stir until well combined.
- Stir in chopped cilantro.
- Serve immediately or cover and refrigerate until ready to serve.
Recipe Notes and Variations
- Bacon: I picked up cans of black peas with bacon added. You can add a few slices of cooked and crumbled bacon for added flavor.
- More Vegetables: Add any fresh vegetables that you have on hand. Diced tomatoes, cucumbers or celery are great options.
- Storage: Store black eyed pea salad in an airtight container in the refrigerator 6-7 days.
