Ingredients for Black Eyed Pea Salad

  • Apple Cider Vinegar
  • Olive Oil
  • Brown Sugar
  • Kosher Salt
  • Fresh Ground Pepper
  • Ground Cumin
  • Smoked Paprika
  • Minced Garlic
  • Canned Black Eyed Peas
  • Red Onions
  • Bell Peppers
  • Fresh Cilantro

How to Make Black Eyed Pea Salad

  1. Make the Dressing: Add vinegar, olive oil, brown sugar, salt, pepper, cumin, paprika and minced garlic to a bowl. Whisk to combine.

  1. Rinse and drain black eyed peas.
  2. Dice the vegetables.
  3. Place black eyed peas, vegetables and dressing in a bowl. Stir until well combined.
  4. Stir in chopped cilantro.

Recipe Notes and Variations

  • Bacon: I picked up cans of black peas with bacon added. You can add a few slices of cooked and crumbled bacon for added flavor.
  • More Vegetables: Add any fresh vegetables that you have on hand. Diced tomatoes, cucumbers or celery are great options.
  • Storage: Store black eyed pea salad in an airtight container in the refrigerator 6-7 days.
