Sandwiches are a quick and easy way to get dinner on the table and there’s nothing more comforting and delicious than a po boy sandwich. We made a quick blackened shrimp and a batch of creamy coleslaw and piled it all on a toasted hoagie roll. Add some Cajun mayo to flavor it up even more!

How to Make Blackened Shrimp Po Boys:
- Peel and devein shrimp.
- Toss with olive oil and blackened seasoning.
- Prepare grill or place a large skillet on the stovetop.
- Melt butter into a hot skillet and add shrimp.
- Cook, stirring often until shrimp are pink and curled, about 8-10 minutes.
- Butter Hoagie Rolls and toast lightly.
- Mix mayo and Blackened Seasoning together. Spread over toasted buns.
- Layer buns with coleslaw and top with blackened shrimp.
- Serve immediately.

Blackened Shrimp Po Boys
Ingredients
- 1 pound shrimp peeled and deveined
- 2 tablespoons olive oil
- 1/2 cup blackened seasoning
- 1/4 cup butter divided use
- 4 hoagie buns
- Creamy Coleslaw
for Cajun Mayo
- 1/4 cup mayonnaise
- 1 tablespoon Blackened Seasoning
Instructions
- Toss shrimp with olive oil and 1/4 cup blackened seasoning.
- Heat a large skillet on the grill or stovetop. Add 2 tablespoons of butter and shrimp.
- Cook for 8-10 minutes until shrimp is pink and curled.
- Remove from heat.
- Butter hoagie buns with remaining butter and toast lightly.
- Mix mayo and blackened seasoning together.
- Spread mayo on buns if desired, top with creamy coleslaw and blackened shrimp.
- Serve immediately.
