BLT Grilled Cheese

BLT Grilled Cheese sandwiches are the perfect lunch or quick dinner that pleases everyone. Classic grilled cheese topped with a classic bacon, lettuce and tomato sandwich made in about 30 minutes.

Sandwiches are always a hit for busy weeknights and we like to serve these epic BLTs with chips, french fries or air fryer tater tots. Side salads like Broccoli Pineapple Salad or Watermelon Salad are also great additions to sandwiches.

We almost always have bacon on hand and it comes in handy for nights that I forget to make a dinner plan, and seriously, who can refuse a BLT? Make it a triple decker sandwich by adding a grilled cheese and literally no one will be able to resist. If you are looking for something simple, try a Tomato Sandwich!

Ingredients for BLT Grilled Cheese.

🟢 Ingredients Needed

  • Bacon
  • Wheat Bread
  • Butter
  • Colby- Jack Cheese ~ Pepper Jack, American, Provolone or Swiss work well too. 
  • Lettuce
  • Tomato
  • Mayonnaise

🟢 Step By Step Directions

  1. Cook the bacon in the oven on a lined baking sheet for 20 minutes. Drain on paper towels.
  2. Butter one side of each slice of bread.
  3. Shred the cheese, slice the tomatoes and shred lettuce.Collage making grilled cheese + 2 slices toasted bread.
  4. Place 2 slices of bread, butter side down on a hot griddle or skillet.
  5. Top with shredded cheese and a slice of bread, butter side up.
  6. Cook until toasted, flipping to toast both sides.
  7. Add the other 2 slices of bread, butter side down until toasted. Flip and toast lightly on the other side.Collage making Grilled Cheese BLT.
  8. Remove grilled cheese and toasted bread slices to a wire rack.
  9. Assemble the sandwiches.
  10. Add mayo to the toasted bread slices, top with lettuce, tomato and bacon.
  11. Spread mayo onto one side of the grilled cheese sandwiches.Grilled cheese stacked on a BLT.
  12. Stack together. Sliced Grilled Cheese BLT.
  13. Slice on the diagonal with a sharp knife.
  14. Serve immediately.

Ingredients

  • 8 slices bacon
  • 6 slices wheat bread
  • 3 tablespoons butter
  • 2/3 cup shredded colby-jack cheese
  • 1/2 cup shredded lettuce
  • 4 slices tomato

Instructions

  • Preheat oven to 400°. Line a rimmed baking sheet with parchment paper or aluminum foil.
  • Add bacon in a single layer and bake for 20 minutes or until crispy.
  • Remove to a paper towel lined plate.
  • Spread butter onto one side of each slice of bread.
  • Place a griddle or skillet over medium-high heat and place bread, butter side down onto the griddle.
  • Top 2 slices with cheese and add top each with a slice of bread, butter side up.
  • Flip the grilled cheese sandwiches to toast on both sides. Flip the single slice of bread to lightly toast on both sides.
  • Remove to a wire rack.
  • Spread mayonnaise on the toasted bread, top with lettuce, tomato and bacon.
  • Spread mayonnaise onto one side of grilled cheese and place over the bacon.
  • Slice at a diagonal with a sharp knife and serve immediately.

Notes
