Broccoli, Cheese & Ham Pockets are easy to prepare ahead and have ready for those on the go nights. How many of you deal with trying to squeeze a healthy meal into that tiny bit of time between after school, sports practices, dance lessons, homework and everything else that you have to get done in a typical evening? I totally get it and today I have a great meal idea that is super easy and delicious plus it is ready to eat on the go! Broccoli is the one vegetable I can count on my kids to eat – how crazy is that? I always have frozen broccoli on hand and I love the handy little steamer bags that come with the cheese sauce! So convenient and no cleanup!
I’ve mentioned before that meal planning is not my strong suit. I rely on frozen vegetables to be ready to go without the worry of waste and spoiling. Freezing fruits and vegetables is nature’s pause button, locking in those rich nutrients at the peak of ripeness. Recently, The University of California, Davis in partnership with the Frozen Food Foundation did a study on the nutrients found in frozen fruits and vegetables. Their findings revealed that frozen fruits and vegetables are generally as rich in nutrients and often more so than fresh. It is hard for me to get my meat and potatoes guys to get enough fruits and vegetables. I know this is an issue we all face with nearly 80 percent of Americans falling to consume the recommended amounts of fruit and nearly 90 percent failing to meet recommendations for vegetables. I made Broccoli, Cheese & Ham Pockets and the whole family thought they were pretty tasty. Perfect as a healthy after school snack or for those on the go dinners.

Well these handy pocket sandwiches can be made ahead of time and the kids will eat them up! Just four simple ingredients and you have a hand held dinner ready to go.
Puff pastry, Frozen Broccoli and Cheese, cubed ham and an egg to brush over the puff pastry for the gorgeous golden brown crust. You can do this. Of course you can switch up the fillings with any meat and frozen vegetable combination that your family will love.
Broccoli, Cheese & Ham Pockets
Ingredients
- 1 17.3 oz package Frozen Puff Pasty, thawed
- 1 1/2 cups cubed cooked ham
- 1 12 oz frozen Broccoli and Cheese Sauce
- 1 egg beaten
Instructions
- Preheat oven to 400 degrees F. Cook broccoli and cheese sauce about 4 minutes in the microwave until cheese sauce is melted. Stir together and set aside. Unroll puff pastry and roll out slightly. Cut each sheet into 4 rectangles. Divide broccoli and cheese sauce and ham onto each of 8 rectangles. Fold sides together and ends, pinching edges to seal. Place seam side down on a greased or lined baking sheet. Press lightly to spread filling evenly into pastry. Brush with beaten egg. Bake for 25 minutes or until golden brown. Serve immediately or cover and refrigerate to serve later. To reheat- microwave 45 seconds to 1 minute or until heated through.
Oh, you are so smart using the broccoli with cheese in these! Eliminates the extra step of buying and grating and adding cheese. Brilliant and my kid would LOVE these!
No way! These are too too easy. But I can see where it would work and be delicious. I love puff pastry.
