Cashew Fudge

Cashew Fudge is a rich and creamy candy to make as a homemade gift or to enjoy for the holidays. An easy recipe that doesn’t require a candy thermometer and can be made in about 10 minutes. 

Fudge is one of the most popular candy recipes to make for the holidays but some of the old fashioned recipes can definitely be a challenge to make, especially for beginning candy makers.  Just like my Snickers Fudge, this recipe is so easy and works every time.

Ingredients for Cashew Fudge:

bag of chocolate chips, cashews, sweetened condensed milk, flake salt

  • Semi-Sweet Chocolate Chips
  • Salted Cashews
  • Flake Sea Salt

How to Make Cashew Fudge:

  • Line an 8 x 8 inch baking dish with parchment paper.

  • Coarsely chop cashews and set aside.

  • Add chocolate chips and sweetened condensed milk to a saucepan and place over low heat.

  • Stir often, scraping the bottom and sides of the pan until chocolate chips are melted and mixture is smooth.

  • Remove from heat and add cashews.

  • Mix well.

  • Pour into lined baking dish.

  • Smooth well.

  • Refrigerate about 20 minutes.
  • Sprinkle with flake salt and press lightly into fudge.
  • Return to the refrigerator for about another 1 hour 40 minutes.

  • Lift  parchment paper out of the baking dish to a cutting board.

  • Slice fudge into 1 inch squares. 
  • Serve immediately or store in an airtight container. 

HOW TO STORE FUDGE:

Fudge can be stored in an airtight container at room temperature for about 2 weeks or refrigerated up to 4 weeks. 

Easy Fudge Recipes

The inspiration for this fudge came from a box of chocolate covered salted cashews that my sister in law brought me a while back. They were so irresistible and I had the idea to make that flavor combination into a delicious candy to enjoy for the holidays.

Ingredients

  • 3 cups semi-sweet chocolate chips
  • 14 ounce can sweetened condensed milk
  • 1 1/2 cups chopped cashews
  • 1/4 teaspoon flake sea salt

Instructions

  • Line an 8 x 8 inch baking dish with parchment paper. Add chocolate chips to a heavy bottom pan with sweetened condensed milk.
  • Cook over low heat, stirring until chocolate chips are melted and mixture is smooth.
  • Remove from heat and stir in cashews.
  • Pour mixture into lined baking dish and spread evenly.
  • Chill for 20 minutes.
  • Remove from refrigerator and sprinkle with flake sea salt.
  • Return to the refrigerator for about another 1 hour 40 minutes.
  • Remove from baking dish to a cutting board.
  • Trim edges and slice into 1 inch squares.
  • Serve immediately or store in an airtight container.
