Chipotle Lime Chicken Sandwiches
- Lately, I am finding myself with less and less time to prepare meals, but flavorful food is still an option with these Chipotle Lime Chicken Sandwiches. The chipotle and tangy lime coated chicken is complemented by the cumin mayo and sauteed onions for a superb sandwich fit for family dinners or company. My older boys have started football practice and all meals must be ready to go in a hurry and I had these ready to go in about thirty minutes. As I’ve said before, I am a sissy when it comes to spicy food, so if you really like it hot, you can add a little more ground chipotle to the sauce. These sandwiches are sure to be a hit, I know they sure were around my outfit!
Chipotle Lime Chicken Sandwiches
Ingredients:
1 1/2 pounds chicken, cut into bite size pieces
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1/2 cup lime juice
1/4 cup orange juice
1/4 cup brown sugar
1/2 teaspoons granulated garlic
1/2 teaspoon ground chipotle
1 medium onion, thinly sliced
1 tablespoon butter
1/2 cup mayonnaise
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon sea salt
1 tablespoon cilantro, finely chopped
6 kaiser rolls or hamburger buns
Cooking Directions:
Add olive oil to a large skillet over medium-high heat. When oil is hot, add chicken and season with salt and pepper. Stir chicken occasionally until chicken just starts to brown.
While chicken is cooking mix lime juice, orange juice, brown sugar, garlic, and chipotle together. When chicken starts to brown stir in lime mixture and lower heat to medium. Stir chicken and continue to cook until liquid is reduced and chicken is completely coated.
In a separate small skillet melt butter and add onions, cooking over medium-high heat until caramelized.
Stir together mayo, cumin, chili powder, sea salt and cilantro and set aside.
Lightly toast rolls and spread about a teaspoon of mayo on each. Layer on chicken and a few sauteed onions and cover with top side of roll.
