Coconut Pound Cake

How to Make Coconut Pound Cake:
- Add butter, shortening, brown sugar, eggs and vanilla to a mixer bowl. Beat until well combined with an electric mixer.
- Stop the mixer and add flour, baking soda and salt. Mix at medium speed until mixed well.
- Add coconut and mix until combined.
- Pour into a greased loaf pan and bake for 1 hour.
- While cake is baking, toast the coconut in a dry skillet over low heat. Set aside.
- Run a knife around the edge of the pan to loosen the cake.
- Remove cake from pan to a wire rack to cool.
- Mix powdered sugar icing by mixing powdered sugar and milk until smooth.
- Place cake on a serving tray.
- Pour over cake letting it drizzle over the sides.
- Top with toasted coconut. Cut into slices and serve.
Recipe Variations:
- This recipe uses half shortening and half butter. The recipe can be made with shortening or butter, or the combination of the two, measuring 1 cup total.
- White sugar can be substituted for brown sugar.

Coconut Pound Cake
Ingredients
- 1/2 cup butter softened
- 1/2 cup shortening
- 3 eggs
- 1 1/2 cups brown sugar
- 2 teaspoons vanilla extract
- 1 3/4 cup all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup shredded sweetened coconut flakes
- non stick cooking spray
for icing:
- 1 1/2 cup powdered sugar
- 1/4 cup milk
- 1 cup toasted coconut
Instructions
- Preheat oven to 325° with a rack on the bottom.
- In a mixer bowl, add softened butter, shortening and brown sugar. Mix until combined.
- Add eggs, one at a time, mixing until combined.
- Mix in vanilla extract.
- Add flour, baking soda and kosher salt.
- Spray a loaf pan with non stick cooking spray.
- Pour batter into loaf pan and bake on the bottom rack for 1 hour or until a toothpick inserted comes out clean.
- Remove to a wire rack to cool for 10 minutes.
- Place cake on a serving tray.
- Mix powdered sugar with milk and pour over cake and down the sides.
- Top with toasted coconut.
- Slice and serve.

Your ingredients for the glaze has powder sugar twice, not milk for the second ingredient.
