This is the classic that you grew up with and a summer staple. So easy to put together and a great way to enjoy your fresh summer produce.

How to Make Creamy Cucumber Salad:

  1. Wash cucumbers and dry thoroughly. Slice in about 1/4 inch thick slices. Place in a serving bowl.
  2. Slice red onions into small pieces and add to serving bowl.
  3. Mix dressing together in another bowl and pour over cucumbers and onion. Toss to coat. Cover and refrigerate one hour before serving.

We have served this Creamy Cucumber Salad with bbq burgers, grilled chicken tenders, fried chicken strips and deep fried catfish. It is one of the easiest side dishes to make and is the perfect addition for pretty much any meal. I even love to have it on hand as a snack.

How to Store Cucumbers:

Cucumbers are one of those veggies that perish rather quickly. They say they are best kept at room temperature but I find that they last a little longer in the refrigerator. I like to keep them in a small basket on the shelf, towards the front. The back or the bottom of the refrigerator will be too cold and will make your cucumbers mushy.

Ingredients

  • 4 cups sliced cucumbers
  • 1/3 cup sliced red onion
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon fresh dill
  • 1 teaspoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt

Instructions

  • Add sliced cucumbers and red onion to serving bowl.
  • Combine mayonnaise, sour cream, dill, vinegar, sugar, garlic and salt together and pour over cucumbers.
  • Mix to combine.
  • Cover and refrigerate one hour or until ready to serve.
