We cook dinner just about every night of the week and prefer a big variety of dishes. This Creamy Pesto Sausage Pasta was definitely a favorite and will be on the menu again soon. It really hits the spot when you are craving comfort food and don’t want to stand in line at Olive Garden.

Ingredients for Pesto Sausage Pasta

🟢 Ingredients Needed

  • Italian Sausage Links
  • Mushrooms
  • Pasta ~ We use spaghetti. 
  • Heavy Whipping Cream
  • Parmesan Cheese
  • Pesto
  • Kosher Salt
  • Tomatoes
  • Fresh Basil

🟢 Step by Step Instructions

  1. Wash mushrooms and pat dry with paper towels. Thread onto skewers. Spray with olive oil and season with salt and pepper or your favorite dry rub. Mushrooms on skewers and Italian sausages on a grill.
  2. Cook sausages and mushrooms over indirect fire with the grill closed about 10 minutes. Turn the sausages and mushrooms and continue to cook until sausages reach 165° using a digital meat thermometer. Collage, smoked Italian sausage links, mushrooms on skewers.

  4. Cook spaghetti according to package directions and drain.
  5. In a saucepan, add heavy cream, shredded parmesan cheese, pesto and salt.
  6. Cook over medium heat, whisking until well combined and sauce is thickened.
  7. Pour sauce over spaghetti and mix well. Sausage sliced, mushrooms on a cutting board.

  9. Mix into the pasta.
  10. Garnish with diced tomatoes and basil.

Storage: Store leftover pasta in an airtight container in the refrigerator up to 3 days.

Reheat: Place pasta in a pan with 1 – 2 tablespoons of milk, stir to combine. Cover and cook over medium heat, stirring occasionally until heated through.

Sausage Variations: Use any type of sausage that you prefer. Andouille or browned sweet Italian sausage are also great options.

Pasta Variations: Linguine, angel hair or bucatini are great options. This recipe would also work with cheese tortellini.

Ingredients

  • 5 Italian sausage links
  • 16 ounces mushrooms white or portabella
  • 2 tablespoons olive oil
  • 2 tablespoons dry rub
  • 12 ounces spaghetti
  • 2 cups heavy whipping cream
  • 4 ounces finely grated parmesan cheese
  • 1/2 cup pesto
  • 1/2 teaspoon kosher salt
  • 1/2 cup diced tomatoes
  • fresh basil cut into ribbons, optional garnish

Instructions

  • Prepare a grill fire to 350°.
  • Wash mushrooms and dry on a paper towel.
  • Toss mushrooms with olive oil and sprinkle with dry rub. Thread onto skewers.
  • Cook sausage links and mushrooms over indirect fire with the grill closed for 8 - 10 minutes.
  • Turn the sausages and mushrooms and continue to cook until sausage reaches 160° using a digital meat thermometer, about 15- 20 minutes total.
  • Remove sausages and mushrooms to a baking sheet. Tent with foil to keep warm while you cook the pasta and sauce.
  • Cook spaghetti in boiling water, drain well.
  • Meanwhile, make the sauce in a saucepan, adding heavy cream, parmesan, pesto and kosher salt. Whisk together and cook over medium heat. Whisk often until sauce is thickened and heated through.
  • Add the cooked spaghetti to the sauce and toss to coat.
  • Slice the sausage links and mushrooms and stir into the pasta.
  • Garnish with diced tomatoes and basil.
