Grilled Pork Chops are always a favorite dinner at our house. This recipe is a good marinade that works with beef chicken or pork and it is my new favorite pork chop marinade, especially for thick pork chops.
It’s made with simple ingredients and makes the most juicy pork chops. If you prefer breaded chops, try these Cornflake Pork Chops that are ready in under 30 minutes.
How to Make the Best Pork Chop Marinade Recipe
- Add brewed coffee to a small sauce pan and combine with brown sugar.
- Whisk in Worcestershire sauce, Italian seasonings, smoked paprika, garlic and salt.
- Heat to boiling and turn down to a simmer. Cook about 5 minutes, stirring often. Remove from heat and allow to cool.
- Speed up the cooling process by pouring marinade into a mason jar or small bowl and place it in the freezer or refrigerator for about 15 minutes.
- Marinate the Pork Chops: Place pork chops a bowl or ziploc bag and cover with marinade, turning to coat both sides.
- Cover and refrigerate at least 1 hour or up to 4 hours.
- Grilling Marinated Pork Chops: Prepare grill to a medium fire, about 300° – 350°.
- Place pork chops on grill and brush with marinade.
- Sear pork chops over the fire and turn to sear other side, about 2 minutes on each side. Move to indirect heat and continue to cook until internal temperature reaches 145° using a digital meat thermometer, about 7-10 minutes.
- Remove from grill and allow to rest 5 minutes before serving.
How to Bake Marinated Pork Chops
- Preheat oven to 350°
- Place pork chops on a greased or lined baking sheet and bake for 12-15 minutes or until internal temperature reaches 145°.
This marinade works with any cooking method and you will be surprised how flavorful and delicious it makes these pork chops. The coffee adds an unexpected depth of flavor but I wouldn’t say that it tastes like coffee. You just have to give it a try.
The brown sugar creates a sticky glaze as the pork chops sear over the fire and this marinated pork chops recipe turns out tender, juicy and delicious. We used boneless pork chops for this recipe. If you have bone-in pork chops, just adjust your cooking time slightly.

I was wondering about chicken boneless legs and thighs. It should work great with good flavor. Maybe lemon or orange zest in the marinade? Sliced diagonal breasts will work but they cook quickly and tend to dry out some. Maybe wrap them in foil for 5 minutes on each side, remove from the foil, and two minutes on each side on the open grill with marinade wiped on?

The instructions say to add Italian seasonings, but that is not listed in the ingredients–did I miss that? How much Italian seasonings do I add?

Why are pork chops always dry

Pork chops are lean and can dry out easily. The marinade helps keep them moist but most importantly, don’t overcook them. Use a digital thermometer and cook to about 140° – 145° and let them rest a few minutes before serving.

The pork chops appear to be cut in half. It resembles boneless chicken thighs, sliced thin. What cut of chops are used? Not the bone-out center cut? You also didn’t state the thickness of the chops. I think 1 1/2 chops sliced in half will work out better with the marinade unless they finish too quickly and are tough that way.
