It seems like some weeks I am at a constant run. So many errands, so many things to do and pick up in a million different directions. Don’t you love weeks like this? It sure makes getting dinner on the table a challenge.

I was looking for something easy for dinner and just couldn’t stand the thought of another frozen pizza. I wanted some real food.
While out running errands, I happened upon the Barber Foods Stuffed Chicken Breasts in the freezer section of Walmart and thought we would give them a try.
Cordon Bleu is one one of those dishes that I love but never take the time to make.
Find them in a store near you with the Barber Foods Product Finder. I’m a big fan of getting dinner in the oven while I do something else like help with homework or catch up on folding laundry.
I popped them in a 375° oven for about 45 minutes. I had made a double batch of The Brown Butter Mashed Potatoes earlier in the week, so this dinner was really coming together with little effort. I had a package of fresh green beans and thought that would round out the meal.
My guys are totally meat and potatoes kind of guys, they are not real keen on vegetables. We always make this Easy Green Bean Casserole for the holidays and these Bacon Green Beans on occasion, but I think these Almond Green Beans are my new favorite.
How to Make Almond Green Beans:
I cooked the green beans in boiling water, drained them and added a little olive oil, garlic and salt and cooked them just a couple of minutes more. I topped them with toasted sliced almonds and they were a hit.
This might be the first time they ate the whole pan of green beans! I will definitely be adding these to the weekly rotation and they are delicious enough for company or holiday meals.

Almond Green Beans
Ingredients
- 12 oz fresh or frozen green beans
- 2 tablespoons olive oil
- 1 teaspoon Kosher salt
- 1/2 teaspoon granulated garlic
- 1/3 cup toasted sliced almonds
Instructions
- Bring 3 cups of water to a boil in a skillet.
- Add green beans and cook, stirring occasionally about 7 minutes.
- Drain water from skillet.
- Add olive oil to green beans and place over medium- high heat.
- Season with salt and garlic and sauté about 2 minutes.
- Top with toasted almonds and serve immediately.
