We love Chinese takeout but rarely have it these days. This Kung Pao Chicken is a dish the entire family enjoys and making it at home lets you choose ingredients that you can feel good about feeding your family.
I find chicken thighs are the most flavorful in stir fry dishes but you can use chicken breasts if that’s what you have on hand. I added carrots, celery, green onions and water chestnuts along with cashews. Peanuts also work great too. Feel free to add in your favorite vegetables.
I served it up with brown rice and my guys gave it two thumbs up. Quick, easy and delicious, which is exactly what I like in a weeknight meal.
