Obviously these amazing appetizers were the creation of my husband and teenage son and they were one of the best things I’ve ever tasted!
There are lots of ways to stuff potato skins but I’m telling you these Loaded Potato Skins are going to blow your mind. We used a smoked roast beef, (get the step by step recipe) but you could use, chopped steak, ground beef or whatever you have on hand. Although, I highly recommend the smoked roast beef.
How to Make Loaded Potato Skins:
- Wash 6 small red skin potatoes and dry.
- Cut in half and place on a baking sheet.
- Pour olive oil over potatoes and toss to coat.
- Turn potatoes cut side down in a single layer.
- Bake for 25 minutes or until fork tender.
- Remove from oven and cool slightly.
- Remove center of each potato with a spoon and set aside for another use.
- Sprinkle each potato half with salt and pepper.
- Add a bit of shredded cheese to each potato half.
- Top with smoked roast beef.
- Wrap each potato with bacon and secure with a toothpick.
- Bake for 10 minutes or until cheese is melted and potatoes are heated through.
- Garnish with green onions and serve with Dr Pepper Barbecue Sauce.
These easy appetizers are great hot from the oven or at room temperature. They are sure to be the first thing to disappear at your next party.

Tips for Making Loaded Potato Skins:
- Use small red or white skin potatoes.
- Scrub them with a brush to remove any dirt and remove any eyes.
- Cutting the potatoes in half will make them cook faster, saving you some time in the kitchen.
- A light coating of olive oil will keep the potatoes from drying out when baked.
- Cook bacon until it just turns brown but not crisp. This will make it easy to wrap around the potatoes. Check out my recipe on how to cook bacon. Easiest method ever!

- 1 cup chopped smoked roast beef
- 2 green onions chopped
