The summer heat is cranking up and there’s nothing better than a refreshing cocktail to sip by the pool!
These Mango Rum Coolers are so easy to whip up in the blender. Just a bit of orange juice, fresh mango, a splash of rum and lots of ice. It blends up into an frosty drink that is sure to cool you off.
Summer parties and celebrations are my favorite. Last week we managed to have two! We celebrated the Fourth of July and my oldest son, Cody got married!! Can you believe it? I hardly can but I’m so very happy for them.
Cody and Abby met in high school when we were living in Wyoming. They decided to skip having a big wedding and chose a small court house ceremony.
Tony and I attended as the witnesses and then they were good sports and let me take a few photos on the ranch.
We are very happy that Abby is officially part of the family. To celebrate, we grilled steaks and made twice baked potato casserole and a big Greek Salad for dinner.
I baked up Dorie Greenspan’s amazing Party Cake layered with raspberry jam and topped with loads of cream cheese. We toasted the newlyweds with champagne and it was a really special day for two very special people. Life is good!
I think this was my first no-cry cake for a celebration. I’m known for my cake disasters and for calling my sister in law to come fix whatever cake mess I have created.
Thank goodness it turned out for this important occasion! No one wants mom crying on their wedding day and especially not over the cake!
It’s so surreal that two of my boys are adults. I am very, very proud of them all.
So there’s my big news! I have been running like a crazy person to get everything done the last couple of weeks and I am ready to hit the pool and relax with one of these Mango Rum Coolers!
Of course you can skip the rum for the kiddos and just have a Mango Cooler, still refreshing and delicious or try my Strawberry Mango Coolers!

Mango Rum Cooler
Ingredients
- 2 cups orange juice
- 3/4 cup fresh chopped mango
- 4 oz light rum
- 2 cups ice
- fresh mint for garnish
Instructions
- Add all ingredients to a blender and blend until smooth.
- Garnish with mint if desired and serve immediately.
