Roast Beef and Cheddar Sandwich
A Roast Beef and Cheddar Sandwich is a take out favorite and so simple to make at home. Smoked roast beef is thinly sliced and piled high on a buttery bun with homemade cheddar sauce and barbecue sauce. A delicious flavor combination for lunch or dinner.

I’ve been a long time fan of the Arby’s Beef N’ Cheddar sandwich. I think it’s actually the only thing I have ordered from there.
After making smoked roast beef sandwiches, I knew a beef and cheddar had to happen. We also love these Mushroom and Swiss Roast Beef Sandwiches!

How to Make Roast Beef and Cheddar Sandwich:
For the Roast Beef:
- Use paper towels to pat a chuck roast dry and place on a baking sheet.
- Mix together dry rub with brown sugar, kosher salt, garlic, pepper, smoked paprika and dry mustard.
- Rub over all sides of roast.
- Prepare grill to about 300- 350°.
- Place Roast over prepared grill and close the grill.
- Cook for about 15 minutes per pound until 128-135° internal temperature for rare, 145° for medium.
- Remove from grill and cover with foil. Allow to rest 15 minutes before slicing thin. You may also wrap the roast in plastic wrap and refrigerate until completely chilled to slice.
For the Cheddar Sauce:
- In a heavy bottom pan, melt butter and add in all purpose flour, dry mustard, salt and pepper. Whisk to combine.
- Cook for 3 minutes and whisk in milk and continue cooking about 5 minutes over medium heat until thickened.
- Remove from heat and stir in cheese until completely melted.
Assemble the Roast Beef and Cheddar Sandwiches:
- Toast buns lightly and brush with garlic and onion butter.
- Top buns with barbecue sauce, thinly sliced roast beef, cheddar sauce and top bun.

Ingredients
- For the Roast Beef:
- 4 pound beef chuck roast
- 1/4 cup brown sugar
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon granulated garlic
- 1 teaspoon smoked paprika
- 1 teaspoon dry mustard
- For the Cheese Sauce:
- 2 tablespoons butter
- 2 tablespoons all purpose flour
- 1/4 teaspoon kosher salt
- 1/4 teaspoon dry mustard
- 1/4 teaspoon black pepper
- 1 cup milk
- 2 cups shredded cheddar cheese
- For the Sandwiches:
- 1/2 cup barbecue sauce
- 8 sandwich buns
- 2 tablespoons of melted butter
- 1/2 teaspoon onion flakes
- 1/4 teaspoon granulated garlic
Instructions
For the Roast Beef:

- Cook for 3 minutes, whisking continually. Add milk and continue cooking about 5 minutes over medium heat until thickened.
- Remove from heat and stir in cheese until completely melted.
Assemble the Roast Beef and Cheddar Sandwiches:
- Lightly toast buns
- Mix melted butter with onion flakes and garlic, brush tops with butter while warm.
- Top buns with barbecue sauce, thinly sliced roast beef, cheddar sauce and top bun.
