Smoked Chicken and Black Bean Chili
I have been craving chili and soups and all of the comfort foods that come with fall! After we discovered the deliciousness of Smoked Chicken, I could not wait to make chili with it. It’s oh SO GOOD, y’all!
Of course if you are not into smoking chickens, you could always pick up a rotisserie chicken from the deli and make it. Our local barbecue places will usually sell whole smoked chickens and one place will even let you bring your own chicken, ribs or brisket for them to smoke.

How to Make Smoked Chicken and Black Bean Chili:
Start with diced onion, garlic and sweet red peppers.
Sauté in olive oil until onions and peppers are softened.
Add spices and cook for 1 minute.
Next, add chicken, black beans and chicken broth.
Cook for 10 minutes on medium- high.
Mix cream, sour cream and corn starch together.
Whisk into chili. Lower heat to simmer for 30 minutes.
Garnish with cotija cheese and fresh cilantro.

Tips for Chicken Chili:
- Pick up a smoked chicken from your local barbecue or a rotisserie chicken from the deli.
- Use canned black beans – you can substitute pinto beans or white beans if you prefer. Black beans are just my favorite.
- You can substitute milk for the cream and use your favorite cheese if you can’t find the cotija cheese.
What to serve with Chili:
We love to serve chili with Fritos, tortilla chips or Skillet Cornbread.
Sour cream, cotija cheese and Roasted Garlic Guacamole are our favorite toppings.

Smoked Chicken and Black Bean Chili
Ingredients
- 2 tablespoons olive oil
- 1 cup diced onion
- 1 cup diced red pepper
- 3 garlic cloves minced
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon kosher salt
- 4 cups diced smoked chicken or rotisserie chicken
- 2 cups black beans rinsed and drained
- 4 cups chicken broth
- 3/4 cup heavy cream or milk
- 1/4 cup sour cream
- 2 tablespoons corn starch
- 1 cup shredded cheese for serving I used cotija
- Fresh cilantro for garnish
Instructions
- Add olive oil to a dutch oven or large pan, place over medium-high heat.
- Add onion, red pepper, and garlic.
- Cook until onions softened, about 5-6 minutes.
- Stir in seasonings, cook 1 minute.
- Add chicken, beans and chicken broth. Cook on medium heat for 10 minutes.
- Mix heavy cream, sour cream, and cornstarch together.
- Whisk into chili and simmer 30 minutes.
- Serve with cheese and fresh cilantro.
