I’m always looking for easy beef recipes and when The Foolproof Family Slow Cooker cookbook arrived in my mailbox, this Teriyaki Steak Tips recipe immediately had my attention.
I’ve been a huge fan of Valerie’s Kitchen for years and I was so excited to get the chance to review her cookbook!

How to Make Teriyaki Steak:
- Cut sirloin steak into 1 inch cubes.
- Add oil to a cast iron skillet and add steak. Season with salt and pepper and cook 3-4 minutes.
- Move steak tips into the crock pot with a slotted spoon.
- Make teriyaki sauce in a small bowl by combining soy sauce, mirin, sugar, sesame oil, ginger, garlic and water.
- Pour over steak tips.
- Dice onions and peppers and layer over steak but do not stir.
- Cover and cook 6-7 hours on low or 3-4 hours on high.
- Add mushrooms, cover and cook an additional 30 minutes on low until softened.
- Mix cornstarch and water and whisk into steak mixture, stirring until sauce is thickened.
- Serve over cooked rice and garnish with green onions and sesame seeds.
If you don’t have mirin (sweet rice wine) or can’t find it at your local market, you can substitute white wine mixed with 1-2 tablespoons of sugar. If you don’t cook with alcohol, try substituting chicken broth in place of the wine.

Teriyaki Steak

Teriyaki Sauce
- 2/3 cup light soy sauce
- 2/3 cup mirin sweet rice wine
- 1/4 cup sugar
- 2 tablespoons toasted sesame oil
- 1 teaspoon peeled and finely grated ginger root
- 1 teaspoon minced garlic
- 1/3 cup water
Steak Tips
- 1/4 cup vegetable oil
- 3 pounds top sirloin steak cut into 1-2" cubes
- salt and freshly ground pepper
- 1 cup diced white onion
- 1 red bell pepper cut into 1" pieces
- 1 green bell pepper cut into 1 " pieces
- 8 ounces cremini mushrooms quartered
- 3 tablespoons water
- 3 tablespoons cornstarch
- 3 tablespoons thinly sliced green onions
- 2 teaspoons sesame seeds
- 3 cups cooked rice for serving
Instructions
- For the teriyaki sauce, in a small bowl whisk together the soy sauce, mirin, sugar, sesame oil, ginger, garlic and water.
- For the steak tips, heat 2 tablespoons of oil in a 12 inch cast iron skillet over medium-high heat. When the oil is hot, add half of the beef cubes and season them with salt and pepper. Allow them to cook undisturbed for a couple of minutes, then stir, cooking just long enough to sear the beef without cooking it through, about 3-4 minutes. Use a slotted spoon to transfer the browned beef to the slow cooker. Add the remaining 2 tablespoons of oil to the pan and repeat with the remaining beef cubes.
- Add the teriyaki sauce mixture to the slow cooker with the beef. Layer the onion and bell peppers over the top and with out stirring, cover and cook for 6-7 hours on low or 3-4 hours on high, until fork tender. Add the mushrooms, cover and continue to cook 20-30 minutes on low, just until the mushrooms have softened.
- Combine the water and cornstarch in a small bowl and add the mixture to the slow cooker, stirring for several minutes until the sauce has thickened. Sprinkle on the green onions and sesame seeds and serve over the rice.
