Frozen drinks are where it’s at when the temperatures rise. I love to have some frozen treats on hand all summer long. My Strawberry Lemonade Moscato Slushie, Frozen Peach Margaritas, and Pom-a-Rita Slushie are always refreshing, so I thought it was time for a watermelon twist!

Watermelon Mojito Slushie

I have been anxiously awaiting the arrival of the sweet summer watermelons. Finally, they have arrived! I picked up a couple last week and they were just perfectly ripe and sweet.

Easy Watermelon Mojito Slushie Recipe with fresh limes and mint

We have been having a cookout every weekend and I’m loving every minute of it. We are grilling everything from steaks to ribs to pork chops. I love coming up with easy summer drinks to go along with our meals.

This combination of  watermelon, lime and mint is so delicious in these frozen mojitos and I think you will love them too. It’s a bonus that they are super simple to make.

How to Make a Watermelon Mojito Slushie:

  • Add cubed watermelon to a blender.
  • Add Simple Syrup (made with equal parts sugar and water- heated until sugar dissolves).
  • Add fresh lime juice and rum and fresh mint.
  • Blend until smooth.
  • Pour into a 9 x 13- inch baking pan and freeze 2 hours or until slushie consistency.
  • Rake with fork tines.
  • Serve immediately or store in a zip top freezer bag until ready to serve.
  • Garnish with fresh lime slices and fresh mint.

I always go light on the alcohol, you can add another splash or two if you like. If you are making drinks for the kids, just skip the rum and add in a little Sprite or club soda.

This is a great frozen cocktail to make ahead and have on hand for last minute guests or to enjoy while relaxing this summer.

We are STILL trying to get our pool going. Turns out pool maintenance might be more complicated than I thought it would be. Surely we will have it figured out this week because it’s going to be stinking hot and I need to get in the water.

Since we moved to the ranch, we are pretty far from the lake and we don’t take the boat out much. Having the pool is much better. It is the best thing we’ve ever splurged on.

With our outdoor kitchen next to the pool, we just have the best time hanging out with the kids. It’s become our hangout for family time and you can’t beat that.

Watermelon Mojito Slushie

Watermelon Mojito Slushie is a refreshing drink for any hot summer day!

Total Time 2 hours 10 minutes

Ingredients

  • 4 cups cubed watermelon
  • 4 ounces rum
  • 4 ounces simple syrup
  • juice of 2 medium size limes
  • 1 tablespoon fresh mint, finely chopped
  • Fresh lime slices and mint for garnish

Instructions

Add watermelon, rum, simple syrup, lime juice and fresh mint to a blender.

Blend until smooth.

Pour into a 9 x 13 inch baking pan.

Place in the freezer for 2 hours. Rake with tines of a fork to create slushie consistency. Serve immediately or pour into a zip top freezer bag until ready to serve.

Garnish with fresh lime slices and mint if desired.
