  • Add butter, shortening, brown sugar, eggs and vanilla to a mixer bowl. Beat until well combined with an electric mixer.
  • Stop the mixer and add flour, baking soda and salt. Mix at medium speed until mixed well.
  • Add coconut and mix until combined.

Ingredients

  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 3 eggs
  • 1 1/2 cups brown sugar
  • 2 teaspoons vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup shredded sweetened coconut flakes
  • non stick cooking spray

for icing:

  • 1 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 cup toasted coconut

Instructions

  • Preheat oven to 325° with a rack on the bottom.
  • In a mixer bowl, add softened butter, shortening and brown sugar. Mix until combined.
  • Add eggs, one at a time, mixing until combined.
  • Mix in vanilla extract.
  • Add flour, baking soda and kosher salt.
  • Spray a loaf pan with non stick cooking spray.
  • Pour batter into loaf pan and bake on the bottom rack for 1 hour or until a toothpick inserted comes out clean.
  • Remove to a wire rack to cool for 10 minutes.
  • Place cake on a serving tray.
  • Mix powdered sugar with milk and pour over cake and down the sides.
  • Top with toasted coconut.
  • Slice and serve.

    Your ingredients for the glaze has powder sugar twice, not milk for the second ingredient.
